The Grotto Spa appoints chef Lukas Exelby to Treetop Tapas & Grill

The Grotto Spa at Tigh-Na-Mara Resort, Parksville, B.C. has appointed Chef Lukas Exelby, a renowned culinary artist, as the new head chef of the Treetop Tapas & Grill.

Chef Lukas brings with him a passion and expertise, honed through years of experience at establishments such as The Empress Hotel, Saveur Restaurant, and Union Club in Victoria, B.C.

Trained in the art of classical French cuisine and Red Seal certified, his journey into the culinary world began unexpectedly but grew into a career marked by dedication and innovation. His 12-year mentorship under the esteemed chef Boban Kovachevich, at Harrison Resort and Spa, shaped his style, instilling a profound appreciation for nature’s bounty sourcing ingredients from fishermen and ranchers to foraging in the forest. This is evident in his favourite dish, beef bourguignon, epitomizing his culinary approach - versatile and timeless.

At Treetop Tapas & Grill, he aims to introduce an elevated dining experience, focusing on local ingredients to create dishes that are not only delicious but also tell a story. His tasting menu will lead guests on a seamless journey through the diverse flavours of the Pacific Northwest.
